Purple Sweet Potato Rose Mantou

 Assalamualaikum...
Apa khabar semua? Macam mana cuti hujung minggu? Mesti seronok dapat berkumpul ngan family kan...pergi soping, piknik, balik kg, cuci2 mata. Apa pun aktiviti kita semua aku harap semua happy la...hmmm ni projek hari Sabtu, ingat sekejap je nk buat mende ni...makan jam jugak la utk habiskan 1 adunan...heee kena pk byk kali utk buat semula..
Start buat ni mmg awl2 pagi takut lmbt nk pi teman adik aku servis kete...pkl 12 jugak la baru leh gerak pi servis kete..pastu dah habis servis org Perodua tu bgtau yg tayar depan dah rosak...bila tengok erkk..dah keluar sabut..kat satu tempat, lebih kurang macam luka gitu...owh mmg x selamat nk bwk jauh2, dahla esoknye plan nk gi Nilai huhu mmg terus gi hantar kedai tayar le tuko yg baru 2 bijik. Pung pang pung pang...ptg baru smpai umah..

 Hmmm panjang lak muqaddimah aku...ok cerita kisah pembuatan pau ni plak..asalnye gi BW umah org yg singgah umah maya aku nih, then terjumpa la ada org buat pau @ mantao ni..skali pandang dah jatuh hati...tak sangka pau pun boleh buat bentuk bunga ros..so hari Khamis gi cari keledek kt psr tani...yahuuu dapat la walaupun aku tak pandai pilih.. 
 Masa buat lak, masa nk gentel2 buat bulat2 kecik tu tgk resipi 15g je seketul..mmm biar betul? kecik sgt..so aku ingat nnt paunye kecik sgt lak..so aku gentel 20g sebijik...bila siap, mak aihhh...bosa eh..baru la ku gentel 15g+/- hehe...tu yg dlm gmbr ada yg besar ada yg kecik tu...

Shaping technique adapted with modifications : ziyumamajiayou

250gm steamed purple sweet potato
200gm water
500gm pau flour
1 tsp baking powder
100gm sugar (aku kurangkan jd 90g je)
50gm shortening/Crisco
1/4 tsp salt
11gm instant yeast

1. Mash sweet potato, or blitz sweet potato with almost all the water to get a fine paste. Purple varieties tend to be firmer than orange ones.(aku tumbuk guna lesung batu je, lg halus la)
2. With balance of water, mix with yeast.
3. Combine everything except shortening and mix to form a dough.
4. Put in shortening and knead until dough is smooth. Add slightly more flour is dough is way too sticky to handle. If the dough is sticky but can retain its form, like not slacking down, just continue to knead, the gluten just hasn’t form, there’s no need to add extra flour.
5. Cover and let dough proof until double, about 1 hour.
6. Punch down dough and knead for 1-2 minutes.
7. Divide dough into 50gm portions and form as you wish. For rose bud formation method, please read instructions below.
8. Cover and let the formed dough proof until doubled for another 45 minutes.
9. Steam on high heat for 12 minutes.
